Gluten-Free Scones

Ingredients
- 262 g Gluten-Free All-Purpose Flour
- 50 g Sugar
- 2 t Baking Powder
- 1/2 t Xanthan Gum
- 1/2 t Salt
- 1/4 t Nutmeg
- 113 g Butter Cold, small chunks
- 100 g Blueberries Or any other fruit you prefer
- 2 Eggs
- 74 g Milk Cold
- 1 t Vanilla Extract Gluten-Free
Instructions
- Preheat oven to 400°F
- Add parchment to a sheet pan
- Whisk together all the dry ingredients
- Stir in the cold butter chunks until the mix is crumbly
- Stir in the fruit
- In a separate bowl, whisk the milk, egg, and vanilla until frothy
- Stir the liquids into the flour mix until well-mixed (it will be sticky)
- Use 1/3 cup measure to drop scones onto parchement - let them sit 15 minutes
- Sprinkle with sugar, cinnamon, or both (optional)
- Bake 15 minutes
- Remove from oven and let cool for 5 minutes
- Serve warm with butter or clotted cream and jam
