Ingredients
- 240 g Corn Masa
- 20 g Bread Flour
- ½ t Salt
- 360 g Water Hot
Instructions
- Mix all dry ingredients
- Add hot water and stir with a wooden spoon
- Form into 50g balls, place in a bowl, and cover with plastic wrap
- Let rest for 60 minutes
- Heat a dry (but well-seasoned) cast iron pan to medium heat.
- Spread with a rolling pin (or glass bottle, or taco press) and place in pan
- Cook 2 minutes
- Flip and cook 2 more minutes
Notes
I actually heat two cast iron pans and a cast iron dutch oven on 3 burners and cook 3 tortillas at a time.
Store these in a glass container with a lid, both while serving and for overnight storage. They keep over night in the refrigerator just fine.
