Cut pork shoulder into chunks
Add oil to Instant Pot and pre-heat on Sauté mode
Sear chunks of pork shoulder (sear small batch, move to bowl, sear next batch...)
Turn off Sauté mode and add all other ingredients to Instant Pot and stir
Return Pork
Cook on high pressure for 30 minutes with natural release
Drain through a colander to separate broth
Move pork to a sheet pan and shred with forks
Move sheet pan to oven, add broth to about 1/2 depth of pork, and then broil until you get a few crispy edges (~5 minutes)
