Ingredients

  • lb Pork Shoulder
  • 1 t Salt
  • 1 t Black Pepper
  • 1 T Olive Oil
  • 2 C Chicken Broth
  • 6 Cloves Garlic
  • ¼ C Lemon Juice
  • 1 T Cumin
  • 1 t Oregano
  • ½ C Beer

Instructions

  • Cut pork shoulder into chunks
  • Add oil to Instant Pot and pre-heat on Sauté mode
  • Sear chunks of pork shoulder (sear small batch, move to bowl, sear next batch...)
  • Turn off Sauté mode and add all other ingredients to Instant Pot and stir
  • Return Pork
  • Cook on high pressure for 30 minutes with natural release
  • Drain through a colander to separate broth
  • Move pork to a sheet pan and shred with forks
  • Move sheet pan to oven, add broth to about 1/2 depth of pork, and then broil until you get a few crispy edges (~5 minutes)
