Tortillas (Corn)

Equipment

Ingredients

  • 240 g Corn Masa
  • 20 g Bread Flour
  • ½ t Salt
  • 360 g Water Hot

Instructions

  • Mix all dry ingredients
  • Add hot water and stir with a wooden spoon
  • Form into 50g balls, place in a bowl, and cover with plastic wrap
  • Let rest for 60 minutes
  • Heat a dry (but well-seasoned) cast iron pan to medium heat.
  • Spread with a rolling pin (or glass bottle, or taco press) and place in pan
  • Cook 2 minutes
  • Flip and cook 2 more minutes

Notes

I actually heat two cast iron pans and a cast iron dutch oven on 3 burners and cook 3 tortillas at a time.
Store these in a glass container with a lid, both while serving and for overnight storage. They keep over night in the refrigerator just fine.
